Hot-water and steam cycles create thermal shock that ordinary epoxy can't handle, leading to delamination at the worst possible time. Oils and fats make standard finishes dangerously slippery. Unsealed joints and wall-to-floor transitions trap moisture and bacteria — exactly what a sanitation-driven environment can't tolerate. And any downtime for flooring work has to be short, because a processing line can't stay down long.
